This is the core of a Posting by Oscar on the Ultravair yahoo group:

Here are some of the parts that we need from any engine that we use for the conversion:
 
Bellhousing (we cut the bell off and turn it into a front cover).
Valve covers (we section them to make them shorter).
Crank (we cut off the back part after the second main bearing journal.
Cam (we cut off the back 2/3).
Pushrod tubes.
Pushrods (sort through them to find the best and straightest 4 out of the bunch).
Rockers and studs (again, sort through them to find the ones in best condition).
Heads (we need the two ends, which you can get from a combination of heads; we don't use the center chamber).
Cylinders (cores for exchange).
Rods (ditto).
Cases (we cut off the back 2/3, so if the front third is good, you're good).
Case through-bolts.
Oil pickup.
 
As far as the base engine (cases and heads) that you should be looking for, your Ultravair conversion manual lists those but Pat Panzera has an excellent resource that also lists the ones that are suitable for conversion.  Maybe he'll post a link to those pages, because they are from an Angelfire website that I'm not even sure is still out there.  If you have one of William Wynne's full Corvair conversion manuals, that one will list them as well.
 
The Ultravair can put out 30-35 HP, so it should be plenty of power for your Quickie.  In fact, it may also mean that if you can't find one of the preferred engines (110HP, 164CID) you might still be able to use the 95HP engine and still get plenty of power.  It will cost you the same to convert as the 110HP though.

This is also a quote from the same post:

Just sayin...  They made a finite number of engines, and they are only going to get more expensive as they get more scarce.
