Should shim the barrel...  They make stroker barrels with extra length that you cut down to set the deck height.  

I am rather sure the nickies come with the extra length.

Great Plains are saying below you can use either shims or gaskets or both... 
 
What you can't do is stack the copper head gaskets.  (goes without saying)

My engine needed .33 inch to get the CR down to 7.5 so I had them made in one piece by Gene Berg.com, dint use any head gaskets.

If you still have any doubts, you should probably call Leonard or Steve Bennet at Great Plains...

COPPER GASKETS
Copper cylinder heads gaskets can replace the cylinder shim or a thickness of a shims to reduce your compression ratio. These shims are .040" or .060" thick and are for use with 92mm or 94mm cylinders. The shims install between the top of the cylinder and the cylinder head.

Example: If you require a total of .217" of cylinder shims for a 2180cc or 2276cc engine, you can use a .177" base shim and a .040" copper cylinder head gasket shim.

Ok. I'll ask Scott Casler about it. I'm doing one of his conversions and trying to run 93 octane no-ethanol mogas in a 45 conversion. According to the plans I need to add .040" shims for a deck height of .100" in order to run anything other than 100LL. 

Thanks for the input! Drawings certainly help... Can never be too sure.
